- 500g lamb leg mini roast
- 300g can chickpeas drained rinsed
- 1 1 2 cups couscous
- 1 1 2 cups hot massel salt reduced chicken style liquid stock
- 1 3 cup roasted hazelnuts roughly chopped
- 1 3 cup mint leaves chopped
- 1 orange rind finely grated juiced

- preheat oven to 200u00b0c combine 1 tablespoon oil cumin coriander cinnamon and salt and pepper in a small bowl rub over lamb place in a roasting pan and roast for 25 minutes for medium or until cooked to your liking remove lamb from pan cover with foil and stand in a warm place for 10 minutes
- while roast is standing add chickpeas couscous hot stock and remaining 1 tablespoon oil to roasting pan and stir to combine cover with foil and stand for 3 minutes stir couscous with a fork to separate grains stir in hazelnuts mint orange rind and 1 4 cup orange juice
- spoon couscous onto plates thinly slice lamb across the grain place onto plates sprinkle with mint leaves serve
