Quick Thai Beef Salad Cups


Ready in 30 minutes, these Thai beef salad cups are great for weeknight dinners or as a starter when entertaining.

  • 1 tablespoon peanut oil
  • 250g 4 star beef mince
  • 1 garlic clove crushed
  • 2 tablespoons kecap manis plus extra to serve
  • 1 tablespoon fish sauce
  • 1 2 x 250g packet coles microwave black rice
  • 1 2 small pomelo peeled segmented chopped
  • 1 tablespoon lime juice
  • 24 baby gem lettuce leaves
  • 2 baby cucumbers peeled into ribbons
  • 1 2 small red onion finely chopped
  • 100g perino tomatoes thinly sliced
  • fresh coriander sprigs to serve
  • sliced red chilli to serve
  • lime wedges to serve

  • heat oil in a large frying pan over medium high heat add mince cook breaking up with a wooden spoon for 5 minutes or until browned add garlic cook stirring for 1 minute add kecap manis and fish sauce stir to combine stir in unheated rice cook for 2 minutes or until heated through remove from heat stir in pomelo and lime juice
  • divide mince mixture among lettuce leaves top with cucumbers red onion and tomato sprinkle with coriander and chilli drizzle with extra kecap manis serve with lime wedges
