- 3 x 450g packets rectangular unfilled double sponge cakes see notes
- 1u20443 cup 100s and 1000s plus extra to serve
- 300ml thickened cream whipped
- confetti sprinkles to serve see notes

- place half the ice cream in a large bowl stand for 10 minutes to soften ice cream should not be melted
- meanwhile grease a 19cm base square cake pan line base with baking paper lightly grease an 80cm long piece of baking paper with oil spray top with a second piece of baking paper the same length fold in half lengthways line sides of pan with baking paper to form a tall collar
- cut a 10cm x 19cm rectangle from 2 sponge cakes discarding trimmings place cake pieces side by side in prepared pan fold 2 tablespoons 100s and 1000s through ice cream do not overmix spoon ice cream over cake in pan spread to form an even layer place in freezer repeat process layering 2 more cake pieces and mixing remaining ice cream with 100s and 1000s to spoon over cake in pan cut remaining 2 sponge cakes and place on top cover freeze overnight
- stand cake at room temperature for 10 minutes turn onto a serving plate discard baking paper top with whipped cream sprinkle with extra 100s and 1000s and confetti sprinkles serve
