Caramelised Pumpkin Pizza


Butternut, pumpkin adds sweetness and flavour of this ultimate vegetarian pizza.

The ingredient of Caramelised Pumpkin Pizza

  • 40g of butter
  • 1 2 a butternut pumpkin cut in cubes of 1cm
  • 1 2 cup 125ml of massel chicken style liquid stock see notes
  • 1 tablespoon dark brown sugar
  • 100g spinach leaves
  • 2 large ready made pizza bases
  • 125g of cheese taleggio sliced
  • 1 teaspoon of thyme leaves chopped
  • olive oil drizzle

The Instruction of caramelised pumpkin pizza

  • heat the butter in a large skillet over low heat add the pumpkin and cook gently stirring occasionally until tender add the broth 1 4 cup water and the sugar then bring to a boil and cook for 5 minutes or until most of the liquid has evaporated and the pumpkin has caramelised add the spinach and stir until wilted
  • preheat the oven to 200u00b0c
  • scatter pizza bases with pumpkin mixture top with taleggio and thyme a drizzle of oil bake in the oven for 10 minutes or until the base is crispy and the cheese is bubbling cut into wedges and serve
